Irresistible Chocolate Chip Cheesecake Cookies: A Decadent Dessert Delight

Ingredients:

For the cookie dough:

  • 1 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups semi-sweet chocolate chips

For the cheesecake filling:

  • 8 ounces cream cheese, softened
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. Prepare the Cheesecake Filling:
    • In a bowl, mix the softened cream cheese with powdered sugar and vanilla extract until smooth.
    • Place the mixture in the refrigerator to chill while you prepare the cookie dough.
  2. Prepare the Cookie Dough:
    • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
    • Add the eggs one at a time, mixing well after each addition.
    • Stir in the vanilla extract.
    • In a separate bowl, combine the all-purpose flour, baking soda, and salt.
    • Gradually add the dry ingredients to the butter-sugar-egg mixture, mixing until just combined.
    • Fold in the semi-sweet chocolate chips.
  3. Assemble the Cookies:
    • Preheat your oven to 350°F (175°C).
    • Line your baking sheets with parchment paper or silicone baking mats.
    • Take about 1½ tablespoons of cookie dough and flatten it slightly in your hand.
    • Place approximately 1 teaspoon of the chilled cheesecake filling in the center.
    • Enclose the filling by folding the dough around it, rolling it into a ball, and ensuring the filling is completely sealed inside.
    • Place the assembled cookie balls on the prepared baking sheets, leaving space between them for spreading.
  4. Bake:
    • Bake for 10-12 minutes, or until the edges are set and slightly golden. The centers may appear underbaked but will firm up as they cool.
    • Remove from the oven and let the cookies cool on the baking sheets for about 5 minutes.
    • Transfer the cookies to wire racks to cool completely.
