Instructions:

- In a bowl, mix the softened cream cheese with powdered sugar and vanilla extract until smooth.
- Place the mixture in the refrigerator to chill while you prepare the cookie dough.
- Prepare the Cookie Dough:
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- In a separate bowl, combine the all-purpose flour, baking soda, and salt.
- Gradually add the dry ingredients to the butter-sugar-egg mixture, mixing until just combined.
- Fold in the semi-sweet chocolate chips.
- Assemble the Cookies:
- Preheat your oven to 350°F (175°C).
- Line your baking sheets with parchment paper or silicone baking mats.
- Take about 1½ tablespoons of cookie dough and flatten it slightly in your hand.
- Place approximately 1 teaspoon of the chilled cheesecake filling in the center.
- Enclose the filling by folding the dough around it, rolling it into a ball, and ensuring the filling is completely sealed inside.
- Place the assembled cookie balls on the prepared baking sheets, leaving space between them for spreading.
- Bake:
- Bake for 10-12 minutes, or until the edges are set and slightly golden. The centers may appear underbaked but will firm up as they cool.
- Remove from the oven and let the cookies cool on the baking sheets for about 5 minutes.
