Delicious Baked Salmon with Asparagus in Lemon Garlic Butter Sauce!

Ingredients:

  • 2 salmon fillets
  • 2 tablespoons vegetable or chicken broth
  • 1½ tablespoons fresh lemon juice
  • 1 teaspoon hot sauce (e.g., Sriracha)
  • 4 cloves garlic, minced
  • Salt and freshly ground black pepper, to taste
  • 3-4 tablespoons butter, cut into small cubes
  • 2 teaspoons chopped parsley or cilantro
  • 450g medium-thick asparagus, woody ends trimmed

Instructions:

  1. Prepare the Foil Packets:
    • Preheat your oven to 400°F (200°C).
    • Lay out two large pieces of aluminum foil on a baking sheet.
  2. Assemble the Ingredients:
    • Place a salmon fillet in the center of each foil piece.
    • Arrange half of the asparagus around each salmon fillet.
  3. Prepare the Lemon Garlic Butter Sauce:
    • In a small bowl, combine the vegetable or chicken broth, lemon juice, hot sauce, minced garlic, salt, and pepper.
    • Drizzle half of this mixture over each salmon fillet and asparagus arrangement.
    • Dot each packet with butter cubes.
  4. Seal and Bake:
    • Fold the sides of the foil over the salmon and asparagus, covering them completely, and seal the packets closed.
    • Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and the asparagus is tender.
  5. Garnish and Serve:
    • Carefully open the foil packets (watch out for steam) and sprinkle with chopped parsley or cilantro before serving.
